500 mL PISKOREK RYE SOURDOUGH STARTER
1.8L water
3 carrots
1 parsley
2 leeks
Bunch of fresh parsley
Bunch of fresh lovage
4 cloves of garlic
2 onions
200 g smoked bacon (crude)
400 g white sausage (crude)
6 egg yolks
Fried onion
Pepper
Salt
Marjoram
Preparation:
Step 1.
Wash vegetables (except leeks).
TIP: if no need to peel, do not do it, vitamins are concentrated in the peel;)
Put vegetables and lovage in a pot, then pour cold water, bring to boil and then reduce the heat.
Cook for about 30 minutes.
Step 2.
Remove the skin from bacon, dice the meat, fry in a pan, when the fat melts, add the sausage (whole) and leeks cut into rings.
Fry for 3-4 minutes.
Step 3.
Add bacon, sausage, leeks and sourdough starter to the boiling broth.
Cook for 5 minutes.
Add freshly squeezed garlic.
Add salt, marjoram and pepper to taste
Step 4.
Serve with salted, scalded egg yolks and crispy rye bread.
